Chicken (Pinikpikan)

Ingredients:

• Chicken
• ginger
• black pepper
• ginger

Procedure:

• It is prepared by beating a live chicken with a stick prior to cooking.
• The beating bruises the chicken's flesh, bringing blood to its surface, which is said to improve the flavour after cooking.
• Remove the feather
• Burn the remaining feather then burn the skin,the beak,the feet a little bit, so that you can remove the hard part easily.

**The act of beating the chicken, while done in preparation of the dish, apparently violates the Philippine Animal Welfare Act 1998.[1]

*The chicken you see below is what we call "native chicken", they are good for "Pinikpikan" my local dish.
* It very simple to cook. Pinikpikan is a dish from the mountains of the Cordillera region in the Philippines.
**Those who would like to taste should never see how the chicken being beaten, otherwise you will gonna lose your appetite and you will miss the half of your life if you have no chance to taste it. We could be rude to animals that are delicious to our taste but as an "Igorot" we are sweet people.
